Cowboy Slider Burgers with Fresh Salsa

I love burgers. Big juicy burgers. Small slider burgers. And everything in between!
One of my and Chris’ all-time favorites is the cowboy burger. Cowboy burgers are a regular cheeseburger with bacon and a fried egg on top. Can you imagine something more delicious? Mmmmmmm!!!
I like my bacon crispy and my egg-yolks runny, but this is definitely a cook-to-taste option 🙂
I added a pretzel roll and fresh pico de gallo salsa! Pretzel rolls are thick little buns that taste like soft pretzels and make your burger extra hearty. They are starting to appear in grocery stores, but if you can’t find them, regular buns are definitely delicious too! We made our salsa from the fresh veggies we picked at Easy Pickin’s Orchard.
Also, I love how the only seasonings in the ground beef are salt, pepper, and cumin (of course!). Any How I Met Your Mother Fans out there? I think Ted tagging along as the awkward (but in his view necessary) third wheel for Halloween is just great.

Cowboy Slider Burgers with Fresh Salsa
Ingredients

BURGERS:

1 lb ground beef
-
½ cup breadcrumbs I just put a ½ piece of bread in a blender

1 teaspoon cumin
-
½ teaspoon pepper
-
½ teaspoon salt
-
1 tablespoon butter
-
TOPPINGS:
-
3 ounces of cheddar cheese divided into 6 slices

6 eggs
-
6 pieces of bacon
-
6 small rolls
-
SALSA:
-
2 ripe tomatoes diced
-
½ small onion diced
-
1 jalapeño diced, seeds removed (add seeds for spicier salsa)

¼ cup fresh cilantro
-
juice of 1 lime
-
optional: 2 bell peppers diced
Instructions

Combine tomatoes, onion, jalapeño, cilantro, lime juice, and bell peppers in a large bowl. Set aside so the flavors can combine while you’re making the sliders.

Mix ground beef, breadcrumbs, cumin, salt and pepper together with hands. Form into 6 evenly sized slider patties. Set aside to rest for a few minutes.

Cook bacon to desired crispiness: For crispy bacon, I preheated the oven to 350 degrees, placed a wire rack in a baking sheet, arranged bacon in single layer on the wire rack, and baked it for 30 minutes.

While bacon is cooking, melt butter in a (preferably cast-iron) skillet on medium-low heat. Arrange burger patties and cook for 8 minutes. Flip each patty and cook for an additional 5 minutes. Top each patty with cheese and cook for another 3-5 minutes, until sliders reach desired doneness (suggested internal temperature of 160 degrees). Let rest on plate for 5 minutes.

While burgers are resting, heat skillet on stove over medium-low heat. Fry eggs to desired hardness. For over easy eggs I cooked my eggs for 3-5 minutes, flipped each egg, and cooked them for an additional minute to keep the yolks runny.

Assemble each slider: burger, bacon (I broke each bacon piece in half so they fit better on the slider buns), and an egg on each bun. Serve with salsa and enjoy!
