We’re off on our vacation today! We rented a “Shabby Chic” cottage on the Finger Lakes in NY, and are eager to soak in the lake views from the deck, test out the kayaks and rowboats, and of course grill some fantastic food!

Because we’re going to be grilling all week (hurray!), today I’m sharing a recipe for Mushroom Mozzarella Burgers!

These burgers are juicy, beefy, and fantastic. They cook up deliciously in a cast iron skillet on the stove, or fired up on a grill.

They’re covered in a thick, creamy layer of melted fresh mozzarella cheese and topped with sautéed garlic mushrooms! Yummy! Put it all on a golden, toasted bun and I’m in love 🙂

Mushroom Mozzarella Burgers

Juicy burgers covered in a thick, creamy layer of melted fresh mozzarella cheese and topped with sautéed garlic mushrooms
Servings 4 -6

Ingredients

MUSHROOMS
  • 8 ounces cremini/baby bella/white/portabella mushrooms sliced
  • 2 tablespoons butter
  • ½ teaspoon salt
  • 2 cloves of garlic minced
BURGERS
  • 1 lb ground beef
  • ¼ cup milk
  • ¼ cup panko breadcrumbs
  • 1 clove of garlic minced
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons butter
  • 8 ounces fresh mozzarella cheese divided
  • 4-6 rolls

Instructions

  1. Mushrooms: Melt butter in cast iron skillet over medium heat. Stirring occasionally, sauté mushrooms and salt until all water has evaporated, about 15 minutes. Add garlic and stir until fragrant, about 1 minute. Set aside on plate.
  2. Burgers: In a medium bowl mix together breadcrumbs, garlic, cumin, salt, and pepper. Add milk and mix until an even consistency. Let sit for 3-5 minutes. Sprinkle ground beef on breadcrumb mixture and combine with hands until evenly distributed. Form into 4-6 patties.
  3. Melt butter in a cast iron skillet over medium heat. Cook burgers until internal temperature of 160 degrees F, about 8-10 minutes on each side. Add cheese and cook until melted.
  4. Rolls: Preheat oven to 400 degrees F. Spray rolls lightly with oil and arrange in a single layer on a baking sheet. Toast in oven until warm and slightly brown, about 5 minutes.
  5. Serve burgers on toasted rolls topped with sautéed mushrooms 🙂
